Dr. John Ruby – JBS

John Ruby
Dr. John Ruby currently serves as the Head of Technical Services for JBS USA Fed Beef Division overseeing Food Safety, Quality, and Animal Welfare departments. Dr. Ruby has worked with the now JBS USA Beef Division facilities (previously known as Packerland Packing and Smithfield Beef Group) for 16 years in various food safety and quality roles. Through his career Dr. Ruby has held positions as Laboratory Services Manager (Packerland Packing), Director of Microbiology (Smithfield Beef Group), and his current role as the Head of Technical Services.

Dr. Ruby received his undergraduate degree in Microbiology from the University of Wisconsin-Oshkosh and his Ph.D. in Food Microbiology and Safety from the University of Wisconsin Madison where his research focused on Beef Processing Microbial Intervention Systems and the reduction of E. coli O157:H7 and multi-drug resistant Salmonella spp.

Dr. Ruby sits on the University of Georgia-Department of Food Science and Technology Advisory Committee for Processing Technologies to Ensure Safety for Beef, and also serves as an Affiliate Faculty member for Colorado State University’s Department of Animal Sciences. Dr. Ruby was recently appointed to the United States Department of Agriculture’s National Advisory Committee on Microbiological Criteria for Foods.

Dr. Ruby is originally from Madison, Wisconsin, but currently lives in Fort Collins, Colorado with his wife Beth and three boys Luke (13), Ben (9), and AJ (3).
